Remove the steak from the refrigerator aprox an hour before cooking, do not use oil on the steak or the hot plate, trim a small amount of fat from the steak dice it up into small pieces, by no means cut all the fat off the steak rub a liberal amount of Sea / Rock salt into both sides of your steak, you may use cracked pepper as well depending on your taste. Heat the BBQ plate to very hot put the diced fat on the hot plate & move it around to grease the plate when this is done place your beautiful piece of Dry Aged Steak on the hot plate & cook until browned turn it over & repeat on the other side, cook until your taste in doneness is achieved,
Remove the steak & allow to rest for ten minutes and enjoy.
Oven cooking thicker pieces.
As above follow all the first steps up to the BBQ plate, browning both sides remove from hot plate & place in the pre heated oven for approx. fifteen minutes or again until your doneness is achieved, remove from oven & allow to rest for ten minutes, do not over cook in either situation remembering that the steak will continue to cook whilst resting.
