40 day Dry Aged Beef is a method used since the beginning of time.  It is an old traditional butcher’s handicraft. The English term “dry aged” means “the maturing of meat” – one of the oldest methods in the world to tenderise beef and make it more flavourful. It is a gourmet method of preserving and improving the flavour and texture and tenderness of a cut of beef.

At Brigalow Beef, we use extreme care in the selection, preparation, ageing, packing and delivery of your 40 Day Dry Aged Beef.

LOCALLY SOURCED 

AUSTRALIAN BEEF

Our Prime Beef is sourced from the best beef grown both here on the Darling Downs. Other beef is sourced from as far away as the South Eastern States of Australia. The cuts are hand picked and checked prior to arriving at our facility.

OUR Matured Beef is available for purchase in Whole cuts.

Rump, T-Bone, Rib on the Bone, Rib Fillet and Sirloin, or as sliced portions. ie Thin & Thick Steaks.
Portions are sealed in cryovac for convenience and to lock in flavour.
